Examples of chats

Q

I currently have quality white fish fillets in my freezer. How can I use Michel BRAS products to make it even better?

I have a number 3 knife, Le Moulin and 5 expression.

A

Le Moulin may be the most powerful tool to help. Nuts, dry fruit zest and dried herbs were recommended by Michel. We received the following recommendations: lightly roasted buckwheat flour, roasted hazelnuts, roasted orange zest, Sichuan pepper and a small amount of seaweed. The mix is typical of Michel Bras. A light roast can easily be made in a frying pan.

Q

A gourmet friend and his wife are visiting for a weekend lunch. We've got some quality chicken, so I'm going to make a whole roast and mashed potatoes for the main course. Before that, I want to serve a salad with a twist.

I have a 5 expression and a petit Mandoline, a set of replaceable blades in one holder.

A

Cut the vegetables into various shapes, lightly fry or blanch them and mix them together to create a little gargouille-style salad. Your foodie friends will be delighted.
For example, two sizes of 5 expression juliennes. Cut the courgette into thicker pieces and the carrots into thinner pieces. Sauté both the shredded pieces for just a few seconds in olive oil with the mint leaves. Then switch to a grater with a diagonal blade and now shave the green zucchini. Short noodle-like pieces will emerge.

Now switch to the petit mandoline and slice the radish, adjusting to the thinnest slice. You will get a beautiful, clear slice with a red border. Slice the green courgette and boiled okra into thin slices, about halfway between them. You will have many thin slices of okra that still have the star shape of the cross section of the okra. Adjust the slices to a slightly thicker slice and slice the beets that have been cut into sticks to make a nice board. Arrange them neatly in order, and with a drizzle of olive oil and a sprinkling of nuts of your choice, such as walnuts, shaved with a grater, you will have a salad that both smells and looks wonderful. For reference, watch Chef Nakamura's La Bonne table video on the Michel Bras You Tube Channel. It will surely inspire you to use these tools.
